I had to take a picture of our little maple tree in the front yard.. It is so pretty this year!!! A taste of fall in the south! Up north our leaves would have been gone a month ago.
Finally a Recipe... I had lots of apples in the fridge and need to use them so I found this recipe for apple cake in a new cook book I got at our church, they sold them for missions. It smells yummy and I took a little sliver of it and even warm it tasted good. I have a feeling this is one of them cakes that taste better as it sits. I will let you know in a day or so..
Apple Snack Cake
3/4 c. vegetable oil
2 eggs
2 c. sugar
2 1/2 c. flour
1 tsp. each of soda, baking powder, salt, cinnamon
3 c. chopped apples (did mine in small food processor)
1c. chopped pecans ( I used walnuts)
1bag butterscotch morsels
Combine oil, eggs, and sugar in a large mixing bowl: beat at medium speed until well mixed. Combine flour, soda, baking powder, salt and cinnamon. Stir in pecans, and half of butterscotch morsels and apples. Pour into a greased 9x13 inch pan. Sprinkle batter with remaining morsels. Bake at 350 for 45-60 min.
